Healthy Oatmeal Pumpkin Pancakes

Here is great recipe, the kids will love it! (even the big ones)

-1 cup of whole wheat flour
-1/2 cup of rolled oats
-1 1/2 tsp baking soda
-1 tsp cinnamon
-Pinch ground nutmeg
-Pinch ground ginger
-Pinch of salt
-1/2 cup sugar
-2/3 cup of pumpkin puree
-2 eggs
-2 tbs coconut oil (any veg oil will do)
-3/4 cup milk (any)


Whisk together the dry ingredients and add remaining until well combined. Oil your pan. When pan is hot enough, spoon some batter onto the frying pan into a circle. When pancakes set on top, flip it and fry for a few minutes until both sides are golden brown.
Serve hot with maple syrup or apple butter. Sprinkle some toasted nuts or chocolate chips.
